Cauliflower pulav

Ingredients:

  1. Basmati rice  2 cups wash and soak in water
  2. Onion 1 medium sliced thinly
  3. Tomato 1 medium chopped
  4. Ginger garlic paste 1 tbsp
  5. Green chili 2 nos chopped
  6. Cauliflower 1 medium size cut into small florets 
  7. Cinnamon 1 cm piece,Cardamon 2 pods,Cloves 3,Bay leaf 1
  8. Yogurt 3 tbsp
  9. salt to taste
  10. Red chili powder 1 tsp
  11. Garam masla 1 tsp
  12. Coriander powder 1/2 tsp
  13. Cumin powder1/2 tsp

Method:

  • Wash the florets in hot water 
  • Mix yogurt with salt,chili powder,Garam masala,coriander and cumin powder combine them all together and then add the florets and mix them well and keep it aside
  • Boil 2 cups of water add rice to it cook it until half done and then drain the water
  • Heat a pan with oil add cinnamon,cardamon,bay leaf fry them for a minute and then add onion,green chili fry until onion turns golden brown
  • Now add ginger garlic paste fry them for a minute and then add tomato and salt
  • once the tomato start to become soft add the cauliflower to it mix them well and turn of the heat
  • Preheat the oven to 180 degree
  •  Take a oven proof pan .Layer the cauliflower mixture and half done rice one after another cover it with aluminium foil and bake it in the oven 10 to 15 minutes,check in between weather the rice is soft
  • Serve it with raitha and chips
  • If we want spicy grind half onion and 3 green chili and then fry them while frying tomato


Corn pakoras with mint chutney

I learned this recipe from one of the book  by chef  Sanjeev kapoor  its is very simple and too yummy

Ingredients:

  1.   Corn kernels fresh 1 cup
  2.   Gram flour 4 to 5 tbsp
  3.   Green chili and ginger paste 1 tbsp
  4.   Coriander leaves chopped
  5.   Coriander powder 1 tbsp
  6.   Chaat masala 1 tsp
  7.   Salt to taste
  8.   Oil for deep frying

Method:

  •  Coarsely grind the corn kernels
  •  Now add all other remaining ingredients mix them all together no need to add water
  •  Heat oil in a pan,drop small portion of it in hot oil and deep fry them until golden brown
  •  Serve it with mint chutney

Mint chutney:
 Ingredients:

  1.  Fresh mint leaves 1 cup
  2.  Fresh coriander leaves Half cup
  3.  Ginger 1 cm piece
  4.  Garlic 2 nos
  5. Green chili 1
  6. Lemon juice 2 tbsp
  7. Salt to taste
  8. Coconut 1 tbsp
  9. Cumin seeds 1 tsp

Method:
Wash mint and coriander leaves and then blend them all together into smooth paste
