Ingredients:
- Small egg plant 6 to 8
- Tamarind juice 1/2 cup or tamarind small gooseberry size
- Red chili powder 1/2 tbsp
- Cumin powder 1 tsp
- Coriander powder 1 tsp
- Turmeric powder 1/2 tsp
- Ginger/garlic paste 1 tbsp
- curry leaves
- Coriander leaves
- Mint leaves
- Oil 1/2 cup(any oil of your choice)
- Sesame seeds 2 tbsp
- Poppy seeds 2 tbsp
- Peanuts 1 tbsp
- Coconut 2 tbsp
For seasoning:
- Mustard seeds 1 tsp
- Cumin seeds 1 tsp
- Kalonji seeds 1 tsp
- Fenugreek seeds 1tsp
- Green chili 2 nos
Method:
Pierce the egg plant in quarters
Fry the egg plant in a tbsp of oil
In a pan heat 1 tbsp of oil and fry the seasoning ingredients
Add ginger garlic paste fry them until the raw smell goes
Add onion paste fry them until it turns brown
Add all the dry powders and fry for a minute
Now add the coconut peanut paste
Add the tamarind juice
Add the fried egg plant. Cover and cook in low flame. Stir them in regular intervals
Garnish with lots of coriander ,mint and curry leaves
Serve it with Pulav and Raitha
